Green Chile Chicken Enchilada Casserole

This recipe is an all time favorite in my household. It's not only super delicious but freezes well for up to 3 months. This is a hearty casserole and can be made with the Roasted Garlic Chicken recipe (using a whole bird).
3 boneless, skinless chicken breasts
2 cans cream of chicken soup
3 cans chopped green chiles
1 can Las Palmas green enchilada sauce
4 cups shredded cheese
18 corn tortillas
onion, diced (optional)

Homemade Crispy Candy Bars Recipe

Crispy Candy Bars Recipe: four–layers of delicious goodness. It starts with a base of crispy chocolate, then there’s a soft peanut-packed nougat, followed by chewy, creamy caramel, and topped with a chocolate-peanut glaze. If you think that sounds intense, you’re right. These are intensely good, and intensely addicting.
14 oz chocolate chips
3 oz (6 tbsp) unsalted butter
2 cups crispy rice cereal
¾ cup + ⅓ cup smooth peanut butter
1 cup granulated sugar
½ cup + 2 tbsp heavy cream
1½ cups marshmallow cream (1 7-oz jar)
1½ cups roasted salted peanuts, coarsely chopped
14 oz soft caramels
3 tbsp light corn syrup

Pumpkin Roll with Cream Cheese Walnut Filling

Pumpkin roll is one of my all time favorite things to make at this time of year. If you’re not feeling the fall vibe just yet, this will do it for you. The flavors of pumpkin and cream cheese with the crunch of the finely chopped walnuts is out of this world good. It tastes like the holidays.

1 cup white sugar
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
1 cup pumpkin puree (not pie filling)

1 teaspoon fresh lemon juice

Creamy Shrimp Pasta

This is one of those meals that you can throw together super fast but it seems like a high class type of dish. It includes garlic shrimp, a white b├ęchamel sauce with nutmeg and of course spaghetti! You can pretty much get all of the other ingredients prepared while your pasta water is coming to a boil and while the pasta is cooking as well.

appr. 1 lb raw shrimp (I use frozen raw peeled and deveined shrimp and they are just as good as fresh!)
1 stick butter
1-2 tsp minced garlic
appr. 1/3 block softened cream cheese(I just had this amount leftover in the fridge and it was perfect)
5-6oz spaghetti, fettucine, linguine noodles (whatever you like)
1-2 tbsp Parsley(I used dried herbs but will try it with fresh next time)
1-2 tbsp Basil
1 tsp Seasoned Salt
S&P to taste
1-2 tbsp fresh lemon juice
3/4 can diced tomatoes (you could use the whole can, I just wanted the shrimp to be the star)
1/2 pasta water
Parmesan cheese for topping
