Green Chile Chicken Enchilada Casserole

This recipe is an all time favorite in my household. It's not only super delicious but freezes well for up to 3 months. This is a hearty casserole and can be made with the Roasted Garlic Chicken recipe (using a whole bird).
3 boneless, skinless chicken breasts
2 cans cream of chicken soup
3 cans chopped green chiles
1 can Las Palmas green enchilada sauce
4 cups shredded cheese
18 corn tortillas
onion, diced (optional)
